
About Sustainable Table (formerly Yaubula)
In early 2009, a small environmental not-for-profit called Yaubula (which means ‘natural resource’ in Fijian) was founded by Hayley Giachin. It was founded with the goal of earning income from environmental business activities to support administrative costs, so that all donations could go directly to supporting environmental projects in developing communities.
Within a year of operating, the team at Yaubula started to develop The Sustainable Table cookbook as a way of sharing people’s stories about environmental action through food. The aim was to show people in Australia how interlinked our food system is with the environmental issues we face, while offering practical solutions to them. The book was also about generating revenue to support Yaubula’s environmental projects.
Following the release of the book and its subsequent success, it became clear that there was a strong appetite for information about food and sustainability. The name Sustainable Table quickly superseded Yaubula in terms of awareness and it became apparent that the food space was where Yaubula needed to be.
It is an inevitable fact that the environmental issues of today are all linked to our food system. Without a sustainable environment we will not have enough food to feed ourselves and without a sustainable food system we will not have a natural environment to support our food growing capacity. Yaubula has since evolved to become Sustainable Table by nature and now by name.
What we do

Sustainable Table uses food as an entrée to explore sustainability issues. With up to 60% of our eco-footprint embodied in the food that we buy there is no better place to start.
We are working to build an engaged community of people who want to learn about sustainable food production and how they can support a fair food system for all.
By designing challenging and creative events with our restaurant and community partners, tapping into social media networks, providing business consulting services and sharing stories and learnings through our blog site, we are empowering people to overcome today’s environmental challenges, one meal at a time.
Developing Communities
Sustainable Table supports projects around the world that help to restore the natural environment to ensure the safe and ongoing provision of food.
In developing countries, extreme poverty often leaves people struggling to meet their basic needs. Much of their day is often dedicated to collecting food, water and firewood just to keep their families alive. Yet, despite all of this, there are still people wanting to dedicate themselves to preserving the natural environment and educating community members about the need to care for the earth.
At Sustainable Table, we seek these people out and work with them to turn their ambition into positive outcomes for their community and the environment.
